A passata that does not try to be a sauce. No soffritto, no sugar, no “Mediterranean herbs”. Tomatoes, a thread of olive oil, salt. Suitable where onion and garlic are a problem, and better, we think, where they are not — you can always add them later.
The texture is silk, not pulp. Use it for a free-from lasagne of buckwheat sheets, or simply warm it for gnocchi of chestnut flour.
