The financier is a Parisian habit we have no interest in abandoning — only in rewriting. Ground almond, a little oat flour, and a dairy-free brown butter made from coconut cultured butter, cooked until it smells of hazelnut.
Baked in rectangular moulds until the edges caramelise. Best the day they are made, with coffee, or kept a day for a slightly denser, more serious cake.
